The Agave Lab grows over 20 species of agave and counting, focusing on native California and Southwestern US agave varieties that were traditionally used for food, medicine, fiber and distilled spirits.
In addition to agave, we grow bio-regionally and climate appropriate crops like mesquite, elderberry, prickly pear, and other edible, medicinal and drinkable dryland and subtropical plants.

We’re exploring how agave can be a sustainable dryland crop, providing resources and materials for a range of products from distilled spirits to textiles, surfboards, building materials, fuels and medicine. We're creating a model for regenerative agriculture that thrives in arid climates.
We celebrate the cultures and traditions of the people and places who have tended to agave landscapes, use agave as food, fiber, and fermented & distilled beverages.
